Pork Trotter with Brandy
1kg Chicken
4 tbsp fish sauce
1 Coconut (obtain 200ml coconut milk)
100gm Long bean (cut into 2 inch" length)
1 tsp salt
6 tbsp oil
Green Curry paste
10 Green Chillies
1 Stalk lemon grass
15 Shallots
5 pips Garlic
Method:
I feel like cooking for our parents last week end. My In-law love this dish very much and as well as my own father, But as health wise I only cook for them few times a year. I learn this recipe from my family friends.
My parents said it is tasty but I only took 1 pc.
I cook with presure cooker. After it is cooked add tbsp of Brandy

The ingredient that I season are dark soya sauce, light soya sauce, oyster sauce,
sesame oil and pepper for seasoning.
Then before putting on the stove I add in fried onion, fried garlic about 3 tbsp each and 4 tbsp of tamarine water.

I pound this Green curry paste by my own I will cook it again may
next week I love the taste.

Ingredients: 1kg Chicken

2 pieces Karrif lime leaf
2 Stalk of Coriander leaves
1 tblsp of Coriander Powder
half cup of water

Method:
- Marinate chicken oieces with fish sauce for 30 mins.
- Deep fry long bean till cooked, leave aside.
- Blend or pound curry ingredients into paste.( I prefer pound n it taste nicer)
- Heat 6 tbspoil, fry spices till oil comes out, add in marinated chicken pieces and fry for 5 mins.
- Add in half small bowl of water, reduceheat and simmer till chicken is cooked. Stir in santan, bring to boil, add salt to taste.
- Mix in fried long beans before serving.
