Steamed Cucumber Cake




Ingredients:
180 g Cucumber, 30ml water, 125g caster Sugar, 5 nos eggs, 1.5 tsp baking powder, 220g plain flour.

Method:
  1. Peel the cucumber, cut into small pieces, blend it with water in an electrical food processor until finely paste, remove and keep aside.
  2. Mix Plan flour and baking powder and keep aside.
  3. Whisk eggs and caster sugar until light and creamy with mixer, reduce to low speed, gradually add in cucumber paste, mix well.
  4. Add in sifted flour, stir until become smooth batter, then pour into a 9 inches square steaming at high heat for 30 minute. Remove from heat, leave it to cool , cut and serve. Happy Baking!
